What are Microgreens?

Microgreens are the baby form of certain familiar vegetables, such as Radishes, Peas, Kale, Cabbages, Arugula, Beets, Chard, Lentils, and more. To be considered a microgreen it must be harvested within 10-20 days from germination. Most microgreens are packed with intense flavor and powerful nutrients. These powerful nutrients include vitamins (A, B complex, C, D, E, and K)and minerals, (Copper, Iron, Zinc, Phosphorus, etc.) and other health-supporting components. All microgreens must be consumed fresh without exposure to direct heat. In short these “Pint-Size Power Houses” can be added to any dish enhancing color, flavor, and nutrients to boost its value.
